                    A refreshing couscous salad that has dried raisins, cranberries and apricots. Ingredients: 
                    
                        
                                                1 cup couscous  |  
                                                1 1/2 cups orange juice or 1 1/2 cups tropical juice  |  
                                                2/3 cup slived almonds  |  
                                                1/2 cup dried raisins  |  
                                                1/2 cup dried cranberries  |  
                                                1/4 cup dried apricot  |  
                                                1/2 teaspoon cumin  |  
                                                3 scallions, chopped  |  
                                                salt, to taste  |  
                                                pepper, to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Prepare couscous according to package, but use juice instead of water. 2. fluff couscous with a fork. 3. Add all ingredients and toss until well mixed. 4.
