This is incredible. Such a decadent side dish that goes great with just about everything. Enjoy Ingredients:
2 tablespoons oil |
1/2 cup onion chopped |
1-1/2 cups uncooked brown rice |
1 cup dried apricots |
1 cup chopped prunes |
1 cup dried chopped apples |
4 cups vegetable stock |
1/2 teaspoon ground nutmeg |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground coriander |
Directions:
1. Preheat oven to 350. 2. Heat oil in Dutch oven over medium heat. 3. Cook onion in oil about 2 minutes stirring frequently until tender. 4. Stir in rice and cook 5 minutes stirring occasionally. 5. Stir in remaining ingredients then cover and bake for 50 minutes. |
