Ingredients:
2 tablespoons oil
1/2 cup onion chopped
1-1/2 cups uncooked brown rice
1 cup dried apricots
1 cup chopped prunes
1 cup dried chopped apples
4 cups vegetable stock
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground coriander
Directions:
1. Preheat oven to 350.
2. Heat oil in Dutch oven over medium heat.
3. Cook onion in oil about 2 minutes stirring frequently until tender.
4. Stir in rice and cook 5 minutes stirring occasionally.
5. Stir in remaining ingredients then cover and bake for 50 minutes.
