This refreshing chicken salad, sweetened with vitamin C-rich canned Mandarin oranges as well as grapes, is perfect served atop your favorite bread or pita, in a melon wedge, or over a bed of greens.
Ingredients:
2 (10 ounce) cans chunk chicken, white meat in broth, drained
1/2 cup reduced-fat mayonnaise
1/2 cup red seedless grapes, each cut in half
1/3 cup celery, choped
1/4 cup sliced almonds, toasted (toasting optional)
salt and pepper, to taste
1 (15 ounce) can mandarin oranges, drained
Directions:

3. Combine chicken and mayonnaise in a medium bowl. Stir in grapes, celery and almonds. Season to taste with salt and pepper. Just before serving, gently stir in oranges.
