This is a bit different than the average coleslaw. You could sub any fresh fruit really. The crisp cabbage is so good with it. Nice for the summer Ingredients:
1 head green cabbage |
4 chopped apples |
1 bunch grapes |
3 celery ribs |
2 chopped avocados |
1 cup fresh berries |
1 cup dried cranberries |
1 cup walnuts or 1 cup almonds |
1/2 cup strawberry yogurt |
2 tablespoons lime juice |
1 tablespoon grapeseed oil |
1 tablespoon orange juice |
2 tablespoons finely chopped mint |
Directions:
1. Toss all fruit and vegetable ingredients together. 2. Combine last 5 ingredients and mix. 3. Toss dressing with salad. Serve. |
