A great accompaniment to any moroccan meat recipe. Good hot or cold so can be transported too! Ingredients:
10 ounces bulgur wheat |
5 ounces dried apricots, roughly chopped |
4 ounces sultanas |
2 teaspoons cinnamon |
1 teaspoon ground cumin |
1 lemon, juice and zest of |
2 tablespoons olive oil |
3 tablespoons cilantro, finely chopped |
3 tablespoons flat leaf parsley, finely chopped |
Directions:
1. Place bulgur wheat in a container, and cover with boiling water to a level of 1/2in above the bulgur wheat. 2. Cover the container and leave for 8 minutes. 3. Stir through all of the remaining ingredients and season to taste. 4. Serve hot or cold. |
