These are a great alternative to store bought fruit bars. Healthy and delicious and you can vary what ingredients are included. Just go to the bulk isle and fill up! Adapted from the Ultimate Cookie Book. Apple sauce holds them together. Ingredients:
10 ounces apple sauce |
1/2 cup chopped dried apricots |
3/4 cup raisins |
1/4 sugar (can omit) |
1/3 cup sunflower seeds |
2 t sesame seeds |
1/4 cup raw pumpkin seeds |
1 cup rolled oats (not instant oatmeal) |
2/3 cup self-rising whole wheat flour (or flour +1 t baking soda) |
2/3 cup dry unsweetened coconut |
2 eggs |
note: can add copped nuts with fruit such as almonds or pecans |
note ii: i always add ground flax (about 2-4 t) |
Directions:
1. Preheat oven to 400 F 2. Grease 8 inch square pan, shallow or deep is fine 3. Lin pan with parchment or tin foil (let it hang over sides for ease of removal) 4. Put apple sauce in lg bowl with raisins, apricots, sugar, and sunflower seeds 5. Stir mixture together 6. Add oats, flour, coconut, and eggs to the mixture and gently stir together until evenly combined 7. Turn mixture into the pan and spread to the edges in an even layer 8. Bake for about 25 minutes or until golden brown 9. Leave to cool in the pan, then lift out and cut into bars |
