By using a waffle mix or Bisquick, one can add fruit for a terrific fruit waffle. Easy and perfect for summer or any time!
Ingredients:
1 sm banana
1 sm peach
1 sm pear
orange juice, about 1/2 cup
low fat buttermilk, about 1/2 cup
2 large eggs
honey , about 1/4 cup or as desired
cinnamon, nutmeg, dash salt
2 tsp vanilla
boxed baking mix as needed i.e.. jiffy mix or bisquick brand
Directions:
1. In a blender place peeled and chopped fruit and blend to a puree. Add orange juice and buttermilk, eggs and honey and spices and salt. Pour into a bowl. Add enough boxed mix and whisk into a pancake waffle batter. Cover and chill until needed. Prepare waffles in a well seasoned waffle iron. Freeze extra waffles and thaw and toast as needed. Serve with syrup, butter and jam.
2. Note: recipe meat to be low fat and egg substitute can be replaced for eggs
