Ingredients:
2 cups all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup sugar |
2 teaspoons grated lemon rind |
1 egg, lightly beaten |
3/4 cup plus 1 tablespoon nonfat buttermilk |
3 tablespoons vegetable oil |
vegetable cooking spray |
fruited streusel topping |
Directions:
1. Combine first 6 ingredients in a medium bowl; make a well incenter of mixture. Combine egg, buttermilk, and oil; add to dry ingredients, stirring just until dry ingredients are moistened. 2. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Sprinkle evenly with Fruited Streusel Topping. Bake at 400° for 15 minutes or until golden. Remove from pans immediately. |
