This is a very good bread. It comes from my Aunt Maggie who is long gone, but her notations indicate this was a family favorite for over 40 years. I have made it and it is incredible. Enjoyu Ingredients:
4 cups all purpose flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
2 cups ricotta cheese |
3 eggs beaten |
1 teaspoon vanilla extract |
2/3 cup sugar |
3 tablespoons chopped candied fruit |
2 tablespoons golden raisins |
1 tablespoon chopped almonds |
1 tablespoon grated lemon peel |
1 tablespoon butter melted |
1 tablespoon powdered sugar |
Directions:
1. Preheat oven to 275 then grease and flour a cookie sheet. 2. Sift flour, baking powder and salt into a large bowl. 3. Make a well in center and stir in ricotta, eggs, vanilla, sugar, fruit, raisins, almonds and peel. 4. Knead lightly until dough holds together. 5. Shape into a 12” long loaf and place on prepared cookie sheet and bake 60 minutes. 6. Transfer to a wire rack then brush melted butter over warm loaf. 7. Sift powdered sugar over top then cool completely. |
