A twist on traditional pasta salad. For entering this recipe, I used calorie counts for Compliments Pasta Rotini, Dole Pineapple Chunks in juice, and Dannon Light & Fit peach yogurt. Ingredients:
1 1/2 cups rotini (dry) |
8 ounces pineapple chunks in juice |
8 ounces nonfat peach yogurt |
2 tbsp reduced fat sour cream |
1 1/2 cups canteloupe, cubed |
1 cup seedless grapes, halved |
1 1/2 cups fresh strawberries, sliced |
Directions:
1. Cook pasta according to package directions; rinse in cold water and drain. Cool completely. 2. Meanwhile, drain pineapple, reserving 2 tablespoons juice (discard remaining juice or save for another use;) set pineapple aside. 3. In a small bowl, combine the yogurt, sour cream, and reserved pineapple juice until smooth; cover and refrigerate. 4. In a large bowl, combine pasta, pineapple, canteloupe, and grapes. Just before serving, stir in strawberries. Drizzle with yogurt mixture, toss to coat. |
