This four-ingredient recipe only needs a few extra pantry staples to make it memorable for a weeknight dinner. It cooks in just nine minutes, so make this Moroccan-inspired chicken dish for your family tonight. Ingredients:
1 tablespoon salt-free moroccan seasoning |
1 pound chicken breast tenders |
cooking spray |
1 teaspoon olive oil |
16 dried apricot halves |
1/2 cup reduced-fat sour cream (do not use fat-free sour cream) |
Directions:
1. Sprinkle seasoning evenly over chicken. Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add chicken; cook 3 minutes on each side or until chicken is lightly browned. 2. While chicken cooks, cut apricot halves into slivers. Place in a glass measure; add water to cover. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 2 minutes; drain well. 3. Remove chicken from heat; stir in apricots and sour cream. Serve immediately. |
