The honey-mustard dressing is so quick to make and tastes great on just a simple mixed greens salad, but I had fruit on hand and decided to try that as an extra nutrition addition. I think it worked well...hope you do too! Read more ! A bonus: add some extra mayo and the dressing makes a great pretzel dip! Ingredients:
1/4 cup mayonnaise |
4 tblsps prepared honey-dijon mustard |
1 tblsp soy sauce |
1 tsp lemon juice |
1 large bosc pear, sliced |
1/2 cup red seedless grapes, halved lengthwise |
hearts of romaine lettuce, chopped |
Directions:
1. Mix the first four ingredients - chill dressing in refrigerator for at least an hour to blend flavors. Thin with more lemon juice and/or milk if desired. 2. Prepare lettuce and fruits. (If you want to cut the fruit and have it ready prior to serving the salad, mix it with a little lemon juice to prevent oxidation.) 3. Plate the lettuce & fruit and spoon dressing over top. Garnish with croutons, if desired. 4. Other fruit possibilities could include chopped apple, dried cranberries, mandarin oranges... the combinations are almost endless! Using lime juice instead of lemon in the dressing would make a nice taste variation. |
