Fruited Basmati Rice With Garlic And Almonds |

This Middle Eastern rice dish has a lot going on at one time. It is slightly sweet, savory, nutty, and that little bit of added garlic makes it pop. I served this tonight with roasted chicken and preserved lemons and a creamy cucumber yougurt salad. Read more . It was just what the tastebuds needed! Ingredients:
2c. basmati rice |
4t. olive oil |
1 onion finely chopped |
2 lrg. cloves of garlic |
31/4c. chicken stock |
1/2c. slivered almonds |
1c. dried apricots chopped |
1/2c. raisins |
1t. salt |
pepper to taste |
1/2c. boiling water |
Directions:
1. Rinse rice, place rice in a bowl and cover with cold water, soak 30 min. 2. In a sauce pan add olive oil and onion and saute till golden brown 3. Add garlic and saute 1 min. 4. Add drained rice stirring often cooking for 5 min. 5. Pour stock into pan and bring to a boil 6. Add salt and pepper to taste 7. Simmer 20 min. or until all liquid is absorbed, let rice sit for 10 min. 8. In a bowl combine fruit and boiling water and soak for 5 min. 9. Strain fruit and add to rice along with the almonds 10.
