Ingredients:
2 pkg 10 oz light raisins |
1 jar(s) 4 oz pineapple chopped |
1 jar(s) 8 oz cherries -chopped |
1 teaspoon(s) almond extract |
1 cup(s) brandy or white christmas |
1-1/2 cup(s) butter |
6 eggs |
3/4 cup(s) milk |
2 cup(s) sugar |
4 cup(s) unsifted flour |
Directions:
1. put fruits in glass or plastic bowl and soak overnight in booze 2. beat butter, sugar, almond extract till smooth and fluffy 3. add eggs one at a time beating after each one 4. at low speed beat in flour in fourths alternatly with milk in thirds mix well after each addition 5. add batter to fruit mixture hand stir to mix together and pour in greased loaf pans (smaller pans are better) this is your last chance to pour extra rum into the mix... i use whatever is laying around 6. bake at 325 till toothpick comes out clean - cool - then take cheesecloth thats been soaked in any kind of rum or brandy and wrap around each loaf. then wrap in plastic wrap. resoak the cheesecloth ever few days or week for a couple months rewrapping with saran wrap after each time... then cut and enjoy |
