This dessert is sooo pretty and easy to make. Wowed the girlfriends with this one...think I found it in Cooking Light magazine. I picked up the waffle ice cream bowls at 31 flavors store. You can vary the ingredients as you see fit. Read more ...i.e. add a little rum to the pudding or make a different flavored pudding such as lemon. Makes a great presentation! Next time I make this, I'll take a picture to post! Ingredients:
1 (4-serving-size) package instant lemon or white chocolate pudding mix. (you could use sugar-free pkg.) |
1 1/3 cups fat-free milk (you be the judge) |
1 cup fresh fruit (such as blueberries, sliced kiwi, sliced strawberries, raspberries, bananas) |
4 waffle ice cream bowls or large waffle ice cream cones |
fresh mint (optional, but colorful) |
Directions:
1. Prepare pudding according to the package directions except use the 1 1/3 cups milk. 2. Spoon fruit into waffle bowls. 3. Top with pudding. 4. If desired garnish with more fruit and fresh mint. 5. Serve immediately. 6. Makes 4 servings. |
