this is a recipe from the East Coast Grill in Massachusetts... it is a creation of Chef Chris Schlesinger... i like the fact that it is a different take on a plain fruit salad...you can adjust the heat of the recipe but either adding or subtracting the amount of jalapenos you add. 3 red jalapenos, stems removed, seeded and minced |
1 ripe mango, pitted and cut into 1/2-inch cubes |
1 ripe banana, peeled, and cut into 1/2-inch cubes |
1 ripe papaya, peeled, seeded, and cut into 1/2-inch cubes |
1/2 ripe pineapple. peeled, cored and cut into 1/2-inch cubes |
juice of 3 limes |
a good splash of rum...(optional ) |
