My recreation of the delicious salad at my local co-op. Ingredients:
1 1/2 cups quinoa, dry |
1/2 cup scallion, chopped |
1/3 cup dried cranberries |
1/3 cup raisins |
1/3 cup dried apricot, chopped |
1/3 cup pecans, chopped |
1 (14 ounce) can crushed pineapple, unsweetened |
1 tablespoon lemon juice |
1 tablespoon lime juice |
2 tablespoons fresh basil, finely chopped |
1 teaspoon sea salt |
1/2 teaspoon lemon zest |
1/2 teaspoon orange zest |
2 1/2 cups water |
Directions:
1. In a saucepan, combine water with quinoa and sea salt. Bring to a boil. Reduce heat, cover and simmer 10-15 minutes until liquid is absorbed. Remove from heat, cool to near room temperature. 2. In a large bowl, mix quinoa with all other ingredients. Do not drain the pineapple-the juice is an essential ingredient! 3. Cover and chill in refrigerator overnight. Serve cold. |
