I found this recipe in an ad for Dole pineapple a long time ago in magazine. It's absolutely delicious. Great for holiday parties or pitch ins. Very easy to prepare and you can use whatever fruits you prefer. I personally use the leftover pineapple cut into chunks, sliced strawberries, kiwi and grapes. Ingredients:
10 ounces sugar cookie dough (1/2 package) |
8 ounces cream cheese |
1/4 cup sugar |
1 teaspoon vanilla |
1/4 cup pineapple juice (unsweetened from 20 oz can of pineapple) |
fresh fruit (pineapple, kiwi, berries, grapes) |
Directions:
1. Press 1/2 package of sugar cookie dough onto an ungreased 12 '' pizza pan or cookie sheet. 2. Bake at 350 F 12-15 min or until lightly browned. Cool completely. 3. Beat cream cheese,sugar,vanilla and juice together until smooth. 4. Spread over crust. 5. Arrange drained pineapple and fresh fruit on top. |
