took several Energy Bar Recipes and adapted them to my needs Ingredients:
3 1/2 cups oats (rolled oats or quick cooking oats) |
1/2 cup dried cranberries |
1/2 cup dried plum |
1/2 cup dried apricot |
1/2 cup mini chocolate chip |
1/4 cup flax seed meal |
1/2 teaspoon cinnamon |
1/2 cup light brown sugar |
1 tablespoon salted butter |
1/4 cup honey |
3 eggs |
1 teaspoon vanilla |
1/4 cup water |
Directions:
1. 1. Preheat oven to 350 degrees F. 2. 2. Combine oats, dried fruits, chocolate chips and flax seed meal in a bowl. 3. 3. In a microwaveable container melt butter, brown sugar and honey; once all are melted mix in cinnamon, vanilla, eggs (slightly beaten) and water. Mix well. 4. 4. Mix dry ingredients with wet ingredients. (mixer works best). 5. 5. Press mixture firmly into a 9 x 13 baking pan that has been sprayed with cooking spray or brush with oil or butter. 6. 6. Bake for 18-20 minutes until firm. 7. 7. Cool before cutting into bars. |
