From the Sharp Carousel Microwave Cookbook, 1981. I used cherry Koolaid to frost white cupcakes. It was yummy. This would be good for any holiday. Ingredients:
1/3 cup margarine, softened |
1 1/2 teaspoons lemon juice |
1 dash salt |
2 tablespoons sweetened kool-aid drink mix (any fruit flavor) |
3 cups powdered sugar |
1/4 cup milk |
1/2 cup chopped nuts (optional) |
Directions:
1. Beat margarine until light and fluffy. Stir in lemon juice, salt and Kool-aid. Beat in powdered sugar until smooth. 2. Place milk in 1 cup measure. Microwave on medium high until very warm, 30 to 45 seconds. Add milk to frosting, 1 tablespoon at a time; beat until frosting is desired consistency. Stir in chopped nuts. 3. Fills and frosts 2 (9 inch) layers or a 9 x 13 inch cake. |
