My roommate and I concocted a curried apple dish, and I built off of it. Feel free to vary spices or fruit based on what's around. Ingredients:
spring roll wrappers |
3 -4 apples |
2 bananas, sliced |
1 mango, sliced |
2 teaspoons curry powder |
1/2 teaspoon garam masala |
1/2 teaspoon cinnamon |
1/2 lb firm tofu |
1 inch fresh ginger |
2 teaspoons oil |
Directions:
1. Heat the oil and saute the ginger until it begins to sizzle. 2. Add the tofu-saute for about 3-5 minutes. 3. Add the apples and cook until hot. Add mango and sliced bananas. Cook until heated through. 4. Mix in spices and cook for another 2 minutes. 5. Prepare spring roll papers by soaking in water until soft. Scoop some of the fruit mixure onto it and roll it up. |
