Good for a Sunday Brunch. Also great way to get kids to eat more fruit. Ingredients:
1 large can fruit cocktail (heavy syrup) |
1/2 c light brown sugar |
2 tsp cornstarch |
1 small can mandarin oranges |
3 tbs margarine |
1 c biscuit/baking mix(jiffy/bisquick) |
1/2 c cream |
Directions:
1. Drain the syrup from the fruit cocktail and the oranges and mix with the light brown sugar and the cornstarch. 2. Stir over a medium heat until thick.After it has thicken add the fruit and bring to boil, remove from heat and pour into a square baking dish (9x9 or 8x8). 3. Spread 2 tbs of the margarine over the top of the fruit. Mix the biscuit mix with the cream and the remaing margarine. It should be moist but still a bit stiff. 4. Spoon the mix over the top of the fruit. Bake for 20 minutes at 400 degrees or until the biscuits are golden brown. |
