Fruit Cake (May Be Suitable for Diabetic's) |

I have not tried this as yet, and am posting the title as written. This may not be suitable for all diabetics and until I make for my DH I am not sure about it myself, although I will be using my own freshly squeezed oranges. Ingredients:
5 cups mixed fruit |
1 1/2 cups orange juice |
2 eggs, beaten slightly |
2 cups self-raising flour |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
Directions:
1. Place fruit, orange juice and spices into a large saucepan and boil. Simmer for five minutesand leave to cool. 2. Sift in the flour, and add the eggs. Pour into a greased and lined cake tin. Cook in slow oven for one hour. |
