Fruit cake ( light or dark coloured ) is made with chopped candied fruit and/or dried fruit, nuts and spices . They are served during weddings and Christmas and can be kept for many months .. Ingredients:
this is a fool proof recipe . you can adjust the measurement . just add right enough flour to hold the fruits tight . |
100 g plain flour |
100 g self raising flour |
100 g butter |
150 g molasses or light corn syrup ( for light coloured cake ) |
250 to 350 g dried fruits cooked in fruit juice ( light coloured fruits like golden raisins for light coloured cake ) |
50 g water |
1 tsp baking soda |
1/2 tsp spice pwd |
pinch of salt |
2 eggs , beaten |
brandy ( optional ) |
Directions:
1. Preheat the oven at 180 deg C . 2. Line a loaf or 18 cm pan with baking paper ( I use foil to prevent the cake from browning ) 3. Grease them . 4. Melt the butter and sugar . 5. Add the water , soda , spice and fruits . 6. Once it starts to boil , simmer 1 minute. 7. Cool it completely . ( Its important ) 8. Add the well beaten egg , flour and salt . 9. Mix well and pour into the greased pan . 10. Bake for 60 mins or more until the skewer inserted comes out clean . 11. OPTIONAL : 12. Spike the cake with few tbsp of brandy every few days until it reaches the flavour you prefer . |
