Fruit and Nuts Cream Cheese Loaf |

The cream cheese makes the loaf moist, the nuts add crunch and the cranberries adds a bit of a tangy flavor. Ingredients:
1 cup flour |
1 teaspoon baking powder |
3/4 cup sugar |
1/4 teaspoon salt |
1 teaspoon vanilla |
1/2 cup cream cheese |
1/2 cup butter |
2 eggs |
1 cup chopped nuts (macadamia, pistachio, chestnut, walnuts) |
1/2 cup dried cranberries |
nuts, for garnishing |
Directions:
1. in a mixer, cream the cream cheese then add the butter and mix until fluffy. 2. add the sugar and beat in the eggs one at a time until fully incorporated into the mixture. 3. add vanilla. 4. add the chopped nuts and cranberries. 5. sift together the flour, baking powder and salt. 6. add to the mixture and mix well. 7. garnish with nuts and cranberries on top. 8. transfer into a loaf pan and bake at 325 degrees fahrenheit for 32 minutes or until cake tester comes out clean. |
