Another delicious stuffing! Ingredients:
12 slices fresh or day old white sandwich bread |
2 eggs |
1 cup milk |
2 tbsp butter |
2 cups apples, peeled, cored and chopped (about 2 apples) |
2 stalks celery, chopped (about 1 cup) |
1 cup chopped walnuts |
1 large can mandarin oranges, strained |
1 cup orange juice |
1 tsp minced orange peel, rehydrated in 1 tbsp water |
1/2 tsp poultry seasoning |
Directions:
1. Slice the bread into 1/2 inch cubes and put in a roomy bowl. In a small bowl, whisk together the eggs and milk. Add to the bread and mix well. Melt the butter in a skillet. Add the apples, celery, and onion and sauté until soft, about 5 minutes. Add to the bowl with the bread and mix well. Add the walnuts, oranges, orange juice, orange peel and poultry seasoning and mix until thoroughly blended. Place in a casserole dish and cover with a lid or foil and bake at 350 degrees for 45 minutes. Remove the cover or foil for the last 5-10 minutes of baking for a nice golden color. |
