A light a refreshing summer salad of grapes, jicama and greens with a sweet honey-orange dressing. It's perfect for a brunch, an afternoon snack or even as a dessert! Ingredients:
8 c. mesclun greens |
2 c. julienned cut jicama |
1 c. seedless red grape halves |
1 c. seedless green grape halves |
8 strawberries, hulled, sliced |
orange honey dressing |
1/3 c. undiluted frozen orange juice concentrate |
1/3 c. vegetable oil |
1/3 c. honey |
1 tsp. grated orange peel |
Directions:
1. Arrange 1 cup greens on each of eight salad plates. Divide jicama, grapes and strawberries equally among each salad. 2. In a 1 pint jar with tight fitting lid, combine all dressing ingredients. Shake to combine. Drizzle over salad. Serve immediately. |
