Fruit And Brown Rice Salad |

A quick side dish that I adapted for holiday gatherings to make sure all my vegetarian friends had enough to eat! Can be easily increased to serve more or less and to make the sauce sweeter or more tangy. Ingredients:
2 cups dried brown rice |
4 1/2 cups water |
dash of salt |
1 cup of balsamic vinegar dressing |
2 tablespoons white sugar |
2 tablespoons orange juice (or oj concentrate) |
1 tablespoon lime juice |
1/4 cup raisins |
1/4 dried cranberries |
1/4 dried apricots, chopped |
1 small red onion, chopped |
Directions:
1. Cook brown rice according to directions, usually about 2 cups rice to 4 1/2 cups water and salt for about 45 minutes. 2. Mix together dressing, sugar, OJ, and lime juice. 3. Combine the dried fruit and onions and set in sauce for about 10 minutes. 4. Combine sauce and fruit mixture and rice and stir throughly so all the rice is coated. |
