Fruit and Almond Basmati Rice |

Any mixed dried fruit combo (cranberries, dried cherries, apricots, raisins, etc.) will do, but I especially love it heavy with dried mango. Ingredients:
1 cup uncooked basmati rice |
water, according to package directions |
2 teaspoons butter or 2 teaspoons ghee |
2 teaspoons cumin seeds |
salt |
3/4 cup mixed dried fruit, chopped |
1/4 cup slivered almonds, toasted (see note below) |
Directions:
1. Prepare rice according to package directions using butter or ghee, cumin seeds and salt. 2. Once cooked, add over the top the dried fruit and almonds; do not stir. Place lid loosely over pot and let stand 10 minutes. Fluff with fork. 3. To toast almonds: Spread in single layer on metal baking sheet. Bake in 350°F oven 3 to 5 minutes or until lightly browned, stirring occasionally. (Watch carefully to prevent burning.) Set aside to cool. |
