Frugal Gourmet's Piping Cheese |

This is a Jeff Smith recipe published in his book The Frugal Gourmet . This soft cheese can be used to make many fancy snacks. The herb blend can be varied. Ingredients:
1 lb cream cheese, at room temp |
1/2 cup mayonnaise |
1/4 cup sour cream or 1/4 cup yogurt |
1/8 teaspoon tabasco sauce |
1 teaspoon soy sauce |
1 teaspoon worcestershire sauce |
1/2 teaspoon dry mustard |
1/4 teaspoon oregano |
1/4 teaspoon basil |
1/4 teaspoon whole thyme |
1/4 cup fresh-grated parmesan cheese or 1/4 cup romano cheese |
salt and pepper |
Directions:
1. Whip all ingredients together, and use to fill various snacks. Normally, this is done with a piping bag and tip, but you can fill many types of cracker and vegetable with a small knife or spoon. |
