Frozen Pineapple on a Stick |

A real kid pleaser, great for the summer Ingredients:
8 pieces fresh pineapple |
1/4 cup pineapple juice or 1/4 cup orange juice |
3/4 cup shredded coconut, toasted |
Directions:
1. line cookie sheet with waxed paper. 2. insert wooden skewer or toothpick into one end of the pineapple. 3. dip in juice. 4. then roll in coconut, coating completely. 5. place on cookie sheet. 6. freeze for 1-2 hours or until firm. 7. let stand for 5-10 minutes before serving. |
