I cut this recipe off the top of a frozen whipped topping container many years ago. Being a lemon lover, this appealed to me right away. The prep time does not include the time to chill the crust and let them freeze. Read more . They are easy to assemble, but the hard part is waiting for them to freeze so you can eat them! Ingredients:

1 1/2 cups graham cracker crumbs |
3 tbsp sugar |
1/3 cup margarine |
filling |
8 oz cream cheese, softened |
1/2 cup sugar |
3 tbsp lemon juice |
2 tsp grated lemon zest |
1/2 cup chopped nuts |
12 oz container of whipped topping, thawed |
Directions:
1. Crust: 2. Combine crumbs, sugar and margarine; press into bottom of 13x9-inch pan. Chill. 3. Filling: 4. Combine cream cheese, sugar, lemon juice and zest and mix at medium speed on electric mixer until well blended. 5. Fold in nuts and whipped topping. 6. Spread over crust and freeze. 7. Place in refrigerator for 10 minutes just before cutting and serving. |
