Frozen Ginger Coconut Pecan Sandwiches

This is from my new Weight Watchers Mix It-Match It Cookbook. I think it’s a wonderful idea and I have some in my freezer right now!
Ingredients:
2 tbsp. sweetened flaked coconut, finely chopped
2 tbsp. pecans, finely chopped
1/2 cup vanilla fat-free frozen yogurt
8 gingersnap cookies
Directions:
1. Combine the coconut and pecans on a sheet of wax paper. Place a small baking sheet in the freezer. Place 2 tbsp. Of the frozen yogurt on 1 cookie. Top with another cookie, gently pressing down. Working quickly, roll the cookie edges in the coconut mixture to coat, then transfer to the baking sheet. Repeat with the remaining frozen yogurt, cookies and coconut mixture to make 4 sandwich cookies. Wrap each sandwich in plastic wrap and freeze until firm, about 1 hour.
