Hope you like this frozen confection. Great on a hot day and so easy to make Ingredients:
12 tbs water |
6 tbs sugar |
1 cup flaked coconut |
2 tsp vanilla extract or coconut extract |
1 cup heavy cream |
garnish |
1/4 cup toasted sliced almonds |
1/4 cup toasted coconut |
Directions:
1. Bring water and sugar to a boil and boil 5 minutes till syrupy. 2. Remove from heat and cool about 10 to 15 minutes. 3. Stir in coconut and vanilla. 4. Cool completely. 5. Whip cream to soft peaks and fold into the mixture. 6. Divide mixture into dessert dishes. 7. Freeze one hour or more if needed 8. Before serving, remove from freezer and sprinkle with some of the almonds and coconut |
