These moist muffins are FULL of blueberries. Keep frozen berries on hand, it's so convenient to be able to fold them unthawed into the muffin batter. Ingredients:
4 cups all-purpose flour |
4 teaspoons baking powder |
1/2 teaspoon salt |
1 cup butter or margarine, softened |
2 cups sugar |
4 eggs |
1 cup milk |
2 teaspoons vanilla extract |
2 cups frozen blueberries, unthawed |

2 tablespoons sugar |
1/2 teaspoon ground nutmeg |
Directions:
1. In a large bowl, combine the flour, baking powder and salt. 2. In a mixing bowl, cream butter and sugar. 3. Add eggs, milk and vanilla; mix well. 4. Stir in dry ingredients just until moistened. 5. Fold in frozen blueberries. 6. Fill greased or paper-lined muffin cups two-thirds full. 7. Combine sugar and nutmeg; sprinkle over muffins. 8. Bake at 375 degrees F for 20-25 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack. 9. If using frozen blueberries, do not thaw before adding to batter. |
