Frosted Peanut Butter Fingers |

Made these for a bake sale and they went fast! Ingredients:
1 cup butter, softened |
1 1/2 cups packed brown sugar |
1 cup sugar |
2 1/2 cups creamy peanut butter, divided |
1 egg |
1 1/2 tsp. vanilla extract |
2 1/2 cups quick cooking oats |
2 cups all-purpose flour |
1 tsp. baking soda |
1/2 tsp. salt |
chocolate frosting |
6 tbsp. butter, softened |
4 cups powdered sugar |
1/2 cup baking cocoa |
1 tsp. vanilla extract |
6-8 tbsp. milk |
Directions:
1. In a mixing bowl, cream butter and sugars. 2. Add 1 cup peanut butter, egg and vanilla; mix well. 3. Combine oats, flour, baking soda and salt; add to the creamed mixture. 4. Spread into a greased 15x10x1-in. baking pan. 5. Bake at 350 degrees for 13-17 minutes or until golden brown. 6. Cool slightly on a wire rack, about 12 mins. 7. Spread with remaining peanut butter. 8. Cool completely. 9. In a mixing bowl, combine the butter, powdered sugar, cocoa, vanilla and enough milk to achieve spreading consistency. 10. Spoon over peanut butter layer, then spread. 11. Cut into bars. |
