This yummy dish is a real crowd-pleaser. I especially like the combinations of the creamy topping, coconut and pecans. Ingredients:
3 packages (3-oz. each) orange gelatin |
3 cups boiling water |
1 can (20-oz) crushed pineapple |
3 cups cold water |
4 med. firm bananas, sliced |
2 1/2 cups minature marshmallows |
1/2 cup sugar |
1 tbsp. all-purpose flour |
1 egg, beaten |
1 package (8-oz.) cream cheese, softened |
1 container cool whip or 1 cup heavy whipping cream, whipped |
3/4 cup chopped pecans, toasted |
1/2 cup flaked coconut, toasted |
Directions:
1. In a bowl, dissolve gelatins in boiling water. 2. Drain pineapple, reserving juice. 3. Stir cold water, bananas, marshmallows and pineapple into gelatin. 4. Pour into a 13x9x2-in. dish coated lightly with non-stick cooking spray; refrigerate until firm. 5. Meanwhile, in a saucepan, combine sugar and flour. 6. Stir in reserved pineapple juice untilm smooth. 7. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly. 8. Reduce heat; cook and stir 2 minutes longer. 9. Remove from the heat. 10. Stir in a small amount of hot filling into the egg; return to the pan, stirring constantly. 11. Bring to a gentle boil; cook and stir 2 minutes longer. 12. Cool. 13. In a mixing bowl, beat cream cheese until smooth; add cooled filling. 14. Fold in whipped topping or cream. 15. Spread over set gelatin (dish will be full). 16. Sprinkle with toasted nuts and coconut. |
