It's nice to have a trusty bar recipe like this when you are short on time. The subtle coffee flavor in the frosting adds a tasty touch. Ingredients:
1-1/4 cups shortening |
1-1/4 cups packed brown sugar |
1/2 cup corn syrup |
1-1/2 teaspoons vanilla extract |
4 eggs |
1-1/4 cups king arthur unbleached all-purpose flour |
2/3 cup baking cocoa |
1 teaspoon salt |
frosting: |
1/2 cup butter |
3 cups confectioners' sugar |
2 tablespoons brewed coffee |
1-1/2 teaspoons vanilla extract |
3 to 4 tablespoons milk |
Directions:
1. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in corn syrup and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, cocoa and salt; gradually add to creamed mixture and mix well. 2. Spread into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. 3. In a large heavy saucepan, cook butter over medium heat for 5-7 minutes or until golden brown. Pour into a small bowl; beat in the confectionersâ sugar, vanilla and enough milk until frosting reaches spreading consistency. 4. Frost cooled brownies. Cover and refrigerate until firm, about 1 hour, before cutting. Yield: 8 dozen. |
