I just love Brownies and there are so many recipes out there. This is just one of my faves and I hope you enjoy it! Ingredients:
for brownies |
1 cup butter or margarine |
3 squares unsweetened chocolate |
4 eggs, beaten |
2 cups sugar |
1-1/2 cups flour |
1 tsp. baking powder |
1 cup chopped pecans (optional) |
2 tsp. vanilla |
4 cups mini marshmallows |
note: i prefer to add the miniature marshmallows to the brownie mixture. |
for frosting |
1 cup sugar |
3/4 cup evaporated milk |
1/2 cup margarine |
2 squares unsweetened chocolate |
1 box powdered sugar (1 lb.) |
1 tsp. vanilla |
Directions:
1. Melt margarine and chocolate in top of double boiler amd set aside. Combine eggs and sugar, beating well. 2. Add flour and baking powder which have been sifted together, mixing well. 3. Add chocolate mixture, pecans and vanilla. 4. Pour into 2 greased 9 x 13 pans and bake at 325 for 20 minutes. Remove brownies from oven and cover top with marshmallows. Return to oven for 5 minutes or just until marshmallows melt. 5. Frost brownies while warm. 6. Note: I prefer a thicker brownie as opposed to a thinner one so I use one 9 x 13 pyrex baking dish. 7. For Frosting: 8. Combine sugar, milk, butter or margarine and chocolate; cook over medium low heat until soft ball stage (236 degrees). 9. Add powdered sugar and vanilla. 10. Beat until smooth. 11. Spread over brownies while warm. 12. Cut into squares when cool. |
