Another great recipe from my late grandmother. Ingredients:
1/2 cup butter, softened |
1 1/2 cups brown sugar |
1 egg |
1 teaspoon vanilla |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 teaspoon clove |
3 1/4 cups flour |
1 teaspoon salt |
2 cups grated apples |
1 1/4 cups chopped dates |
1/2 cup pecans (optional) or 1/2 cup walnuts (optional) |
12 ounces cream cheese frosting (or homemade) |
Directions:
1. Beat together butter, sugar, egg, and vanilla. 2. Add soda and spices. 3. Blend in flour and salt. 4. Fold in apples, dates, and nuts (if using). Drop by spoonfuls onto a cookie sheet coated with nonstick spray. 5. Bake 10-12 minutes. 6. Let cool, and frost with cream cheese frosting. |
