This peppered Goat cheese and Olive spread is the perfect appetizer that any guest will salivate over. Ingredients:

8 large spring roll skins |
filling |
one 6oz. package of crystal brook farms goats milk cheese with cracked black pepper |
1 red bell pepper chopped |
20 kalamata olives pitted |
6 pimento stuffed olives |
6 tablespoons of kalamata olive brine |
Directions:
1. In a small Bowl, blend the filling well 2. Using a cookie tray filled with warm water soak the skins two at a time for a few seconds. 3. Place one skin down then place a heaping spoonful of the filling near the edge closest to you. 4. Place the other skin on top of the filling. 5. Fold the Skin over once, and then fold in the sides. 6. Next roll like a jelly roll until you reach the end set aside on a plate. 7. Repeat until all four rolls are finished. |
