You can put whatever you want into this frittata. Ingredients:
8 large eggs, beaten |
2 tablespoons olive oil |
1 medium onion, chopped |
1 tablespoon garlic, minced |
3/4 cup vegetables, chopped (such as roasted red pepper, broccoli, mushrooms, or whatever you have on hand) |
2 serrano chilies, de-seeded and chopped |
1/4 cup grated parmesan cheese or 1/4 cup asiago cheese or 1/4 cup romano cheese |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 teaspoon oregano |
1 tablespoon tabasco sauce |
1 teaspoon worcestershire sauce |
Directions:
1. Pre-heat oven to 350. 2. Heat oil in skillet. 3. Add onion and garlic, saute until soft. 4. Add vegetables and chilies, saute 5 minutes. 5. Put eggs in a bowl and whisk until beaten. 6. Add cooked vegetables and remaining ingredients to eggs in bowl. 7. Stir to combine. 8. Oil a 9 pie pan. 9. Pour egg mixture into pie pan. 10. Bake on 350 for 30 minutes. |
