Filling like a little extra? Add 1/2 cup drained and diced toasted red bell pepper along with the tomato. Ingredients:
2 teaspoons olive oil |
2 1/2 cups fat free egg substitute |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
1 large tomato, choppped |
4 scallions, sliced |
2 cups fat free mozzarella cheese, shredded |
2 tablespoons parmesan cheese, grated |
1/4 cup fresh basil, chopped |
Directions:
1. Heat the oil in a large nonstick skillet over medium heat. Add the egg substitute, salt, and pepper. Cook until the eggs are almost set, about 3 minutes, lifting the edges frequently with a heatproof rubber spatula to allow the uncooked egg to flow underneath. 2. Sprinkle the eggs with the tomato, scallions, and mozzarella. Cover the skillet. Reduce the heat to low and cook until the cheese is melted and the eggs are set, about 3 minutes longer. 3. Sprinkle the frittata with Parmesan and basil. Cut into 4 wedges. Serve hot, warm or at room temperature. |
