Fritelle Di Lenticchie or Lentil Fritters

Traditionally eaten by Itallians for New Year's luck. It is an Italian street food.
Ingredients:
1/4 cup butter
1/2 cup flour
1 cup milk, warm
1 1/3 cups lentils, boiled and drained (about 1/2 cup dry=1.3 cups cooked)
1 pinch salt
olive oil (other ok)
sea salt, for dusting
Directions:
1. Melt butter in saucepan.
2. Stir in flour and cook over low to medium heat stirring until roux turns tan.
3. Add milk in a thin stream, stirring briskly to keep lumps from forming.
4. When this bechamel sauce is very thick, season with salt and remove from heat to cool.
5. Add lentils and mix well.
6. Traditionally, fry by tablespoon in 1 or deeper hot (350F) oil until golden or about 1-2 minutes, turning once. I prefer light oil in non stick or cast iron fry pan.
7. Drain on absorbent paper and dust with sea salt.
8. Serve at once.
9. Serves 4 as meal or make as appetizer.
