A simple Italian egg dish suitable for breakfast, a snack, or an antipasto Ingredients:
4 eggs |
1/2 cup pecorino cheese, grated |
1/2 cup fresh herbs |
1/2 tablespoon butter |
Directions:
1. Preheat small non-stick skillet over medium heat. 2. Whisk together all other ingredients; use whatever fresh herbs are available. 2 parts basil, 2 parts parsley, and 1 part sage works nicely.... 3. Put butter in skillet and when it foams, pour egg mixture in. 4. Reduce heat to low and allow to cook until top is set (about 15 minutes); it may help to cover the skillet about half-way through. 5. Cover pan with a larger plate, invert, and then slide fritatta back into pan to brown other side; cook for a few minutes. 6. Serve, cut into thirds. |
