Frisee Salad With Pancetta

Ingredients:
2 small heads frisée cored and cut into bite-size pieces
1 head endive cored and cut crosswise into strips
1 head radicchio cored and cut crosswise into strips
3 shallots minced
2 tablespoons fresh chives chopped
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
3 tablespoons extra virgin olive oil
1/2 pound pancetta
3 tablespoons sherry vinegar
2 tablespoons white wine vinegar
Directions:
1. In a large bowl combine the frisée, endive, radicchio, shallots and chives.
2. Season with salt and pepper and toss with 2 tablespoon of the olive oil then set aside.
3. Heat a heavy nonstick fry pan over medium-high heat.
4. Add the pancetta and remaining 1 tablespoon olive oil and cook stirring constantly for 2 minutes. Add half of each type of vinegar and cook for 3 minutes.
5. Immediately pour the hot pancetta and vinegar over the greens and toss well.
6. Add the remaining vinegar and serve immediately.
