Ingredients:
3 strips bacon |
2 small heads frisée lettuce, torn into pieces |
1 sweet-tart apple, such as gala, cored and cut into matchsticks |
1/2 cup crumbled blue cheese |
2 teaspoons honey |
1 teaspoon dijon mustard |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons champagne vinegar |
1/4 cup extra-virgin olive oil |
Directions:
1. Cook bacon in a large skillet over medium-high heat until crisp, 5 to 10 minutes. Remove to a paper towel-lined plate. When bacon has cooled, crumble into a bowl. In a large salad bowl, toss frisée, apple, bacon and blue cheese. 2. In a small bowl, whisk together honey, Dijon, salt, pepper and vinegar. Slowly drizzle in oil, whisking constantly, until oil has been incorporated and dressing is emulsified. Pour dressing over salad and toss to coat. Season with additional salt, if desired. |
