A nice light savory danish meatballs. Ingredients:
1 pound ground veal (or) beef |
1 pound ground pork |
1 onion(1cup),finely chopped |
6 tablespoons flour |
3 cups club soda(this makes for the extra lightness of the meatballs) |
2 farm fresh eggs,well beaten |
2 teaspoon salt |
1/2 fresh ground pepper |
2/3 cup butter |
Directions:
1. Combine the ground veal,pork,and onion in bowl. 2. Stir in the flour and beat thoroughly. 3. Beat in the club soda,2 Tablespoons at a time,beating constantly to aerarte the mixture. 4. Beat in the eggs,salt and pepper. 5. Beat the mixture until fluffly. 6. Chill mixture and shape by 2 teaspoons each . 7. Dust lightly with flour. 8. Fry the meatballs in a large frying pan in the butter,until brown on all sides. 9. Serve with Picked Beets if you wish. |
