1 teaspoon oil |
1 onion, finely chopped |
1 garlic clove, crushed |
1/2 teaspoon chili powder |
1 teaspoon ground cumin |
2 teaspoons vegemite |
310 g red kidney beans, drained |
425 g tomatoes, chopped |
Directions:
1. HEAT the oil in a pan and cook the onion, garlic, chili powder and cumin for 2-3 minutes or until the onion is tender. 2. ADD Vegemite, beans and tomatoes and cook for a further 10-15 minutes or until liquid reduces and the mixture is thick. Serve with corn chips. |
