Fried Zucchini And Sweet Corn |

I needed a side dish for fried crab cakes, and came up with this variation of an old favorite. The nutmeg adds another dimension to an already flavorful dish. Ingredients:
1 medium zucchini, quartered lengthwise, then sliced |
1 ear white sweet corn, kerneled, cob discarded |
1 shallot, finely chopped |
nutmeg |
salt and pepper |
1 tsp butter flavored crisco |
Directions:
1. Quarter a medium zucchini lengthwise, leaving the last inch or so so that the quarters remain together. Section across the quarters at 1/4 inch. 2. Shuck one ear of corn. With a sharp kitchen knife, cut the kernels from the cob. Discard the cob. 3. Finely chop the shallot. 4. Heat the Crisco in a saute pan. When hot, add the zucchini, corn, and shallot. Sprinkle with nutmeg to your desired taste. Salt and pepper. Continue frying until the corn develops a brown coating. Remove and enjoy. 5. The quantities stated here are for a large, single serving. Adjust the quantities to suit your portion and guest number. |
